Spinach pesto + tomato fettuccine
To make the pesto – add the following to a blender: 2 large spinach leaves, 2 tbsp olive oil, 2 tbsp crushed nuts, 30g feta, salt + pepper. If you have basil on hand, add that too.
Rinse + drain Superlite Noodles, and cut smaller using scissors. Dry-fry in pan until all water is released. Add 1 tbsp olive oil and 1 tsp garlic paste and fry for 1min. In the meantime, fry your tomatoes in some olive oil with salt + pepper until done.
Combine all and ENJOY
Notes: we used pecan nuts but you can use almonds or whatever you have on hand. Feta can also be substituted for parmesan on another cheese. Fresh herbs are a great addition.
